Remove the "silver skin" membrane from the bone side of the rack of ribs. Rub generously front, back and sides with any rub of your choice.
Let ribs sit room temperature for 30 min.
Start smoker on low or 180 degrees.
Smoke on low for 30 minutes.
Increase to 225 degrees and smoke for additional 1 hour.
Remove ribs and increase temp to 275 degrees.
Smear honey generously on ribs side and double foil ribs. Before closing the foil, pour 1 cup apple juice in foil without letting juice spill. Cover and close foil completely.
Return and smoke for 1 hour.
Remove ribs from foil and increase temp to 375 and smoke for 30 min.
Remove and Smother with BBQ sauce and return for 5-10 minutes.
Let rest for 5 minutes.
