Let steak rest at room temperature for 30 minutes.
Season both sides with salt and pepper.
Without peeling your clove of garlic, lightly crush it, and set it aside for later.
Heat your skillet to med-high and add olive oil.
Sear steak 1 min each side without disturbing.
Turn down the heat to medium or medium-low.
Add your crushed clove of garlic to the skillet and add thyme, rosemary or sage.
Turn steaks after 1 minutes
Add more olive oil if needed.
Add butter, tilt the pan and baste the steak using the melted butter.
Turn steaks after 1 additional minutes.
Brush the steaks with the cooked garlic clove.
Check for doneness by touching the steak.When you are satisfied with the doneness of your steak, turn off the stove top.
Remove steaks from the pan and allow them to rest.
